Scoville ratings are ranges, not constants — heat varies with plant stress, harvest, and seed lineage by ±50%. Superhot handling (Reaper, 7-Pot class) demands gloves and ventilation; capsaicin in eyes or airways is an injury, not a flavor event.
The Scoville scale originally measured dilution-to-taste (organoleptic); modern labs use HPLC and convert to SHU. Numbers across sources disagree — the ranges here reflect published laboratory midpoints.
Accuracy of calculations
We implement well-known, publicly documented formulas (see the methodology section on each calculator page and published Scoville laboratory ranges and pepper-trial data as applicable). Even correctly implemented formulas produce estimates that depend on your inputs and assumptions. Real-world outcomes vary. Do not rely on a single web tool for a consequential decision.
