Taming Heat in Cooking: What Actually Reduces Capsaicin (and What Myths Say)

"Just use less pepper" is technically correct and culinarily boring — the pepper's flavor comes along with its fire. The real skill is modulating heat while keeping flavor: at the plant, in the pot, and at the table.

At the plant: the placenta is the target

Capsaicin glands live in the placenta — the white pith holding the seeds — not the seeds themselves (they are hot by contact). Removing seeds and pith strips 50–80% of a pepper's heat while keeping its flavor skin. This is why "seeded jalapeño" and "whole jalapeño" are different ingredients.

The "cook it longer to mellow" myth survives because roasting mellows flavor (raw grassiness goes sweet-smoky) while the heat rides unchanged. Add volume or dairy for actual taming.

At the table

  1. Whole milk or yogurt — the fat-solubility fix, immediate.
  2. Sugar or honey — a teaspoon under the tongue genuinely dampens the alarm.
  3. Starchy bites (bread, rice) — they mechanically lift capsaicin off receptors.
  4. Water — the myth that spreads the fire. Skip it.

The prevention protocol

Handling hot peppers: gloves above 100k SHU (habanero class) — capsaicin is resin, it coats skin, and the eye-rub at hour two is the classic injury. Wash hands with oil-then-soap (fat lifts what soap alone cannot). And label your superhot sauces; the guests cannot smell the difference and the numbers do not negotiate.
