"Just use less pepper" is technically correct and culinarily boring — the pepper's flavor comes along with its fire. The real skill is modulating heat while keeping flavor: at the plant, in the pot, and at the table.
At the plant: the placenta is the target
Capsaicin glands live in the placenta — the white pith holding the seeds — not the seeds themselves (they are hot by contact). Removing seeds and pith strips 50–80% of a pepper's heat while keeping its flavor skin. This is why "seeded jalapeño" and "whole jalapeño" are different ingredients.
In the pot: what dilutes and what does not

The "cook it longer to mellow" myth survives because roasting mellows flavor (raw grassiness goes sweet-smoky) while the heat rides unchanged. Add volume or dairy for actual taming.

- Whole milk or yogurt — the fat-solubility fix, immediate.
- Sugar or honey — a teaspoon under the tongue genuinely dampens the alarm.
- Starchy bites (bread, rice) — they mechanically lift capsaicin off receptors.
- Water — the myth that spreads the fire. Skip it.
The prevention protocol
Handling hot peppers: gloves above 100k SHU (habanero class) — capsaicin is resin, it coats skin, and the eye-rub at hour two is the classic injury. Wash hands with oil-then-soap (fat lifts what soap alone cannot). And label your superhot sauces; the guests cannot smell the difference and the numbers do not negotiate.
